Hello everybody!

How was the flamenco show? Did you enjoy it? Is anyone up to taking Flamenco lessons after watching such a show??

Here are some important reminders:

Academics:
  • Students from University of Seville: stop by the front desk to pick up your ID cards.
  • The rest of the students: the ones who haven´t stopped by the front desk to pick up their ID cards from CEA, please do so ASAP.
  • To all of you, please be reminded that the deadline for course withdrawals at the Global Campus is February 19th.

  • The survey for Gibraltar and the Cooking Class has already been sent, please fill it out and let us know if you haven´t received it.  You have until the 22nd to sign up for the cooking class, and the 27th to sign up for Gibraltar.  Remember that the cooking class is asigned by  first come first serve, and some of the days are already close to full!
  • The excursion to Lisbon and Sintra, Portugal has been cancelled.  Unforunately, not enough people signed up for the trip as we needed a minimum of 40 people. If any of you want to go there we can recommend you places to stay, things to visit, etc. so don´t hesitate to contact us!

Vía Crucis
A Via Crucis, or 'stations of the cross' is happening on Sunday, February 17th. This doesn´t happen every year so there will be a lot of people attending.
 You can see 14 of the important fraternities that are represented in Holy Week portraying a specific scene of Jesus Christ´s life, from the moment of condemnation to crucifixion.  If you are interested in participating, you can find the schedule here:

Recipe:

Today I want to recommend you an easy recipe to try since there are some students who really want to make something that doesn´t require too much experience or tools ;)
 
Here is my personal recomendation for today: Revuelto de setas y jamón
Ingredients:
•3/4 lb. wild or green asparagus
•3 tbsp extra virgin Spanish olive oil
•2 cloves garlic, finely chopped
•8 eggs
•1/2 tsp. sweet Spanish paprika
•salt to taste






Preparation:
 
This scrambled egg recipe makes 4-6 servings.

  • Rinse asparagus and cut off the woody ends. Pour enough water into a large stock pot to cover asparagus. Bring to a boil. Once boiling, place asparagus in the boiling water for about 2-3 minutes. Remove from heat and drain immediately. Allow to cool a few minutes. When cool enough to touch, cut stalks into pieces.
  • Peel and finely chop the garlic. Heat olive oil in a 10-inch frying pan and sauté the garlic. Add the asparagus and salt to taste and brown.
  • Beat the eggs with the paprika and pour into frying pan with garlic and asparagus. Turn heat on low. Stir the mixture until the eggs begin to cook. Allow the eggs to cook. When done, slide the “revuelto” out of the pan onto a plate to serve.
  • Mushrooms and/or shrimp are popular variation to this basic “revuelto.” If you use mushrooms, halve the amount of asparagus and use about 8 oz. of mushrooms. Saute the mushrooms with garlic and asparagus.
If you want to use shrimp, halve the amount of asparagus and add about 6 oz. of cooked shrimp (41-50 count per pound).
