Hello guys!
This is officially our last post on this blog that has accompanied us through the whole semester. We are really happy to have had the opportunity to share these four months with all of you, and we really hope this experience has changed all of you in a positive way. From now on you will always have a second home in Europe.  All the staff want to wish you the best of luck in the future and thank you for being part of our lives this semester.  We will miss you!

Éste es oficialmente nuestro último post en este blog que nos ha acompañado durante todo el semestre. Estamos muy contentos de haber tenido la oprtunidad de compartir estos cinco meses con todos vosotros, Esperamos que esta experiencia os haya cambiado positivamente. A partir de ahora siempre tendréis un segundo hogar en Europa. Todos nosotros queremos desearos todo lo mejor para el futuro y daros las gracias para formar parte de nuestra vida este semestre.  ¡Os echaremos de menos!

Tapas bar recomendations: Cafe del Valle
Location: Virgen del Valle, nº8
 
Description: This is a new palce where you can enjoy a nice drink or tapa in a relaing enviroment, pretty good for those days when you are done with the midterms!










Spanish recipe of the day: Lentejas

Ingredients:

•1 lb dry lentils
•5 medium potatoes
•2 carrots
•2 celery stalks
•3 garlic cloves
•2 Tbsp Spanish virgin olive oil
•4 boneless pork loin chops
•1/4 tsp ground cumin
•salt and pepper to taste

Preparation:

Note: Preparation time does not include 1 hour for soaking the lentils before cooking.
This Spanish lentil soup recipe makes approximately 6 servings as a main course and 8 servings as a first course.
Rinse lentils and remove any debris or rocks. Place lentils into a medium sauce pan and cover with water. Soak for 1 hour.
Peel the potatoes and cut into 1-inch cubes. Peel the carrots and cut into slices about 1/2-inch thick. Cut the celery stalks into slices. Peel and slice garlic cloves.
Cut the pork into 1-inch cubes.
Pour the oil into a large pot and heat on medium. When oil is hot, add the vegetables and sauté for 3-5 minutes. Add the pork cubes and sauté for 3 minutes.
Add water to pot to cover vegetables and pork. Bring the water to a boil. Add lentils to pot and simmer until lentils are cooked, about 1 hour. Check pot every 15-20 minutes. Add water if/when needed.
When lentils are cooked, add cumin and salt and pepper to taste. Serve in bowls with rustic bread.

Tapas bar recommendation: El loco Sibarita
Location: Calle Jesus del Gran Poder, 83
This is opening soon, we can´t wait to get food there!















Spanish recipe of the day:

Ingredients: Caracoles picantes a la aragonesa (Spicy snails)
  • 1 kg cleaned snails in their shells
  • 1 garlic clove peeled and chopped
  • 100 ml Olive Oil
  • 1 red chilli pepper de-seeded and chopped
  • 1 small onion peeled and chopped
  • 1 sprig of thyme chopped
  • 1 green pepper de-seeded and chopped
  • 1 red pepper de-seeded and chopped
  • ½ tsp paprika
  • salt and black pepper
  • 3 tbsp water
 Preparation:
Put the snails in a large pan and cover with plenty of salted water.
Bring to the boil, drain and refill the pan with water.
Bring to the boil again.
Meanwhile, heat the oil in a frying-pan, and fry the onions, peppers and garlic for about 5 minutes until soft.
When they are almost cooked, add the chilli pepper, thyme and paprika and season to taste with salt and freshly ground black pepper.
Simmer for 5 minutes, adding cold water if necessary.
Drain the snails and transfer them to a flameproof casserole.
Pour the sauce over them, cover and simmer gently for 1 hour then serve.

Examination at USS: Change of Date The School of Filología at the University of Seville, in foresight of the Strike called for next Thursday, May 9, has unilaterally determined to reschedule their exams. As classes at Universidad de Sevilla end on that day, exams that were going to be held on Thursday, May 9, are now officially moved two days in advance to Tuesday, May 7. For the time being, the School of Geografía & Historia has not made any official announcements; however, similar measures are to be expected. Please check your emails for any updates. Further information will be sent in the following hours.


Housing:  
  • Intermediate Spanish Language & Culture: Move out on Saturday, May 11th before 12:00 p.m. If you cannot leave by this time, please let us know so we can try and make arrangements with you.
  • Apartments: Contact the housing department for the check out procedure, read your emails for more information. Remember that the dead line to set a visit is Tuesday, May 14th.

Tapas bar recommendation: Sidonia


Location: Calle Calatrava, 16 (Alameda)
Description: This is a cosy place to have a really good lunch or dinner, great service, great enviroment and great food, what else can you ask for? :)








Spanish recipe of the day: Ajo blanco

Ingredients:
 
•4 oz (1/2 cup) blanched, peeled almonds
•3-4 slices stale baguette or white bread
•3 cloves garlic
•4 cups (32 oz) water
•5 Tbsp extra virgin Spanish olive oil
 •3-4 Tbsp Spanish sherry vinegar
 •16-20 seedless green grapes (optional)
 •salt to taste


Preparation:
This white garlic soup recipe makes 4 servings.
  • Blanch and peel almonds. Dry thoroughly with paper towel and set aside.
  • Peel garlic. Trim crust from bread slices if using French-style or rustic bread. Place bread in 1-2 cups cold water to soak.
  • While bread is soaking, place garlic and almonds into a food processor or blender. Blend on pulse until smooth. Remove bread from water with slotted spatula and squeeze out excess water. Tear bread into quarters and add bread and 1 tsp salt to processor or blender. Blend on pulse.
  • While blending, slowly drizzle olive oil, then vinegar, and finally the water into blender or processor. Taste. Adjust salt, vinegar and oil to taste.
  • Strain through a sieve into a container or bowl. Press as much as possible through the sieve. Seal and chill at least 2-3 hours or overnight. Serve in chilled bowls or glass mugs, with grapes on side.

Hello everybody!
How was the weekend? This is a very touching week since we are almost done with the semester, it is unbelievable how time flies! It seems like just yesterday when we picked you up from the airport and now it´s almost time to say goodbye.

¿Cómo fue el fin de semana? Esta semana es muy emotiva para todos ya que el semestre ya casi ha acabado, ¡Es increíble cómo vuela el tiempo! ¡Parece que fue ayer cuando os recogimos en el aeropuerto y ya es tiempo de decir adiós.

Tapas bar recommendation: La Cacharrería  
Location: Calle Regina, 14
Description: This is the very best place to have authentic carrot cake! It is quite small but charming place to hang out! Seriously, best cakes in the city!














Spanish recipe of the day:  Leche frita   (Fried milk)


Ingredients: Ingredients: 4 egg yolks; 2 cups of milk ; 2 tbsp of cornstarch used as congealer: 1 lemon rind; oil; 4 tbsp of sugar; 2 eggs + some cornstarch to coat the pieces.

Preparation: First mix the yolks, the sugar and the cornstarch in a bowl. Then add the milk and mix all well; add the lemon rind and start whisking with the hand blender to get an homogeneous and thick sauce. The process is to let it get cold in the fridge so it gets curdled by the action of the cornstarch. As soon as the preparation has a jelly aspect, cut into squares, and batter with the rest of cornstarch and deep in the whisked eggs, and finally fry in abundant sunflower oil (olive oil would leave a taste not adequate for a dessert) to a mild brown color. Place the pieces on KP, and sprinkle some sugar on them.

Painting: "Santas de Zurbarán: Devoción y Persuasión"
It is a great exhibition which will take place in the Espacio Santa Clara from the month of May in Seville. The exhibition will try to reconcile the sense and functional nature of Zurbaran's work of the 17th century with the current creation of the most important designers of Spain who were influenced by the artist or consider him the first spanish couturier.-

Tapas bar recommendation: DeÓ Tapas Bar    
 
  • Location: Virgen del Valle, 10 (Los Remedios)

  • Description: This is a new chic tapas bar and restaurant which offers a relaxing environment while you are enjoying a traditional Sevillian meal.

Spanish recipe of the day: Champiñones al ajillo ( Garlic fried Mushrooms)
                                                                                  
                                                                                     Ingredients:

5 tablespoons olive oil


2 tablespoons minced garlic

1 lb assorted fresh mushrooms, cleaned and halved (or sliced 1/4-inch thick, if large)

1/4 cup dry white wine (or dry sherry)

1/4 cup fresh parsley (preferably the flat leaf Italian style)

                                                                                     salt and pepper  
       Directions:

  1. Warm the oil in a large saute pan over medium heat. Add the garlic and saute about 2 minutes. Do not let it burn.  
  2. Increase the heat to high, and add the mushrooms. Saute until tender for about 5 minutes, stirring occasionally. The time may need to be adjusted according to the type of mushroom used.
  3. Add the wine (or sherry) and continue to cook until the liquid is absorbed.  
    4. Add the parsley, salt and pepper, and stir to combine.

    5. Serve while hot.

Tapas bar recommendation: Bar Avelino

Location: Calle Imaginero Fernández-Andes, 1
Description: This is a really cheap place, to hang out on a sunny day or lazy evening, full of young people, enjoy it!










Spanish recipe of the day: Spicy chorizo potatoes with fried eggs  

This is probably the most Spanish dish you can ever taste, try and make it on your way back whenever you feel second-homesick (Seville)  
 Directions: 1.Cook the potatoes in boiling water until tender. Drain really well then fry in 1-2 tbsp olive oil until golden. Scoop out the pan, then add the onion and chilli and keep frying until softened. Add the chorizo and paprika and cook for a minute then add the potatoes back and cook, tossing everything together.

2.In a separate pan, fry the eggs. Serve on top of the potatoes.

Here are some important reminders:

Academics:

Housing:
  • Remember that on May, 1st there will be no cleaning services due to a public holiday. We will be in contact with the students affected by this event so as to rearrange it.
  • CEA Housing department has been officialy informed that this Sunday, April 28th the power will be shut off in Asunción st. between 8 AM and 2 PM.
Student Services:

  • Overnight excursion to Lagos, Portugal: This Friday, 26th we will meet at the corner of the restaurant "Oriza" just in front of the University of Seville to go to Lagos, Portugal. Please do not forget to bring a camera with you, some funds, your swimsuit and a beach towel for your free time. 
  • Remember that on Friday you have to wear your swimsuit on the bus, since there will be no time to change your clothes once we leave Seville.
Here is the itinerary:

Friday

7:45 a.m. Meet at University of Sevilla & Oriza Restaraunt.
8:00 a.m. Leave Seville for Algarve (All time from now on will be in Portuguese time, 1 hour earlier than Spanish)
11:00 am. Arrive Portimao. Boat tour around Portimao that includes lunch.
3:00 Finish boat tour, leave marina for hotel
4:30 Arrive Lagos. Check in to hotel and free time.
7:30. Optional walk to city center with Staff.

Saturday

8:00-10:00 Complimentary hotel breakfast.
11:00 Deadline to check out of the hotel. We will meet at the hotel lobby and will leave the suitcases in the hotel locker.
11:00 Optional visit to Punta de Piedad or free time for beach, lunch
5:00 p.m. Meet at bus station drop off point (WITH SUITCASES) to leave Lagos.
9:30 (Spanish time) We arrive in Seville.

•Here's a picture of your  fellow study abroad-ers helping out at a local food drive! They went on a Saturday and collected food items from customers to give back to the community.  Great job girls!

Tapas bar recommendation: Bar Alfalfa

Location: Calle Candilejo, 1

Classic bar in La Alfalfa with great tapas!






Spanish recipe of the day: Berenjenas rellenas (Stuffed Eggplant)

Ingredients:
  • 4 small eggplants
  • 2 medium onions
  • 3 cloves of garlic
  • Extra virgin olive oil
  • 1 green bell pepper
  • 3/4 pound ground beef and pork mixture (or you could just do one or the other)
  • Tomato sauce (or tomate frito here in Spain)
  • Mozzarella cheese
  • Sea salt
  • Black pepper
Preparation:
1.Preheat the oven to 300°F
 2.Wash the eggplants well and cut them in half lengthwise
 3.Put them on a baking sheet, skin side down and make criss cross cuts through the flesh
 4.Drizzle with lots of olive oil and sprinkle with sea salt and fresh ground pepper
 5.Bake for 45 minutes to 1 hour, until flesh is completely tender
 6.Take out of the over and let rest for 15 minutes covered in aluminum foil while you prepare the filling
 7.Mince the garlic and dice the onion and pepper very small
 8.Start to saute the diced vegetables in hot olive oil while you scrape out the flesh of each eggplant and add it to the pan
 9.When the vegetables are starting to brown, add the ground meat and saute until cooked through.
 10.Season with salt and pepper and remove from the heat.
11.Let the mixture rest for a few minutes before filling the empty eggplant skins.
12.Add a layer of tomato sauce to the empty skins before filling
13.Fill each skin to the top, and cover in mozzarella cheese
 14.Put under the broiler until just browned on the top
 15.Enjoy your stuffed eggplants!
