How was your weekend? Are you ready for the upcoming one?
Here are some important reminders:
Academics:
- ISL&C and SL&SS students: the registration forms should be brought to the Academic Dean´s office no later than Friday, February 8th.
- ISL&C, SL&SS, H&SL and LA&S students: be reminded that you can only be enrolled in 4 or 5 3-credit courses.
We would like to announce the winners of the Photographic Contest... Congratulations, Michelle Correa and Katie Bannon! Tomorrow Tuesday, February 5th, you can come to the office to pick up your prize! On Thursday´s blog we will publish a few of their pictures so everyone can see how hard they worked.

Overnight excursion to Córdoba and Granada: we will meet at 8.00 A.M. at the corner of the "Oriza" restaurant in front of the university of Seville. Please do not forget to bring your cameras with you, some funds and warm clothes and jackets as Granada gets really cold during this time!
Here is a quick itinerary for the excursion:

- For those students who still haven´t brought their passport to CEA or given us a copy, please do it ASAP as we will need it for this upcoming excursion.
- The cooking class survey will be sent out soon, keep your eyes peeled!
- The first student committee meeting will be tomorrow, Tuesday, February 5th at 4:00 PM.
- Please remember that the due date to sign up for the optional trip to Lisbon and Sintra, Portugal is February 12th, so if you are interested stop by the student services office or fill out the survey that we sent to you a few weeks ago.

Recipe:
Carrillada:
Ingredientsolive oil
2 onions
3 cloves of garlic
2 teaspoons of smoked paprika
1 kg of carrilada (pig's cheek) - if you can't get it, substitute with any stewing cut
500g of carrots
2 large tomatoes
200 ml of chicken stock (more if not using a pressure cooker)
1 teaspoon of salt
4 bay leaves
Method
Peel and roughly chop the onions. Peel and smash the garlic. If using carrillada, it comes in small 'steaks' and can be cooked whole. Peel the carrots but leave whole. Top and tail the tomatoes and cut into quarters.Put plenty of olive oil in a pressure cooker or large saucepan. Add the onions to the oil and fry gently. When they are nearly done, add the garlic and continue frying for a minute or so.Then add the paprika, stir and fry for a few seconds, add the meat, stir to mix, and fry for a few minutes. Add the rest of the ingredients.If using a pressure cooker, put the lid on, heat until the cooker whistles, turn to minimum and cook for 20 minutes. If using a conventional pan, cover and bring to a boil, turn to minimum and simmer for about 2 hours, check the liquid level occasionally.Like all stews, this is improved by being left for a day.
